Chilli Con Carne

A staple in most people's repertoire and certainly one of my most cooked dishes over the years. I tend to batch cook this nowadays, so I end up with a few extra portions for the freezer to use when I need something pre-prepared. The spice element is up to you. I like quite a kick but not that it burns my mouth. You can adjust to suit your tastes. Give it a go, it isn't as complicated as you might think. Recipe Ingredients 500g lean minced beef 1 white onion finely chopped 1

Thai Red Chicken Curry

If you've followed my story so far with this blog, you'll know I'm a big curry fan. Sometimes I fancy something fragrant and flavoursome rather than spicy and when that's the case, I turn to Thai curry. My version of Red Thai Curry is simple to prepare and only takes about 30 mins, so could easily be done as a midweek meal. Yes, you can make your own curry paste (I have in the past) but on this occasion it's done for me by Sainsburys (other retailers are available!) If you ha

Beetroot and Feta Pasta

I was given a packet of red lentil and beetroot spiral pasta last week. I didn't even know it existed! A friend had spotted it in a local Aldi store and thought it might be worth an experiment. I decided to try it out and make a Saturday night main meal ..... I must admit I was very happy with the overall result, although the pasta did lose at lot of its dark red beetroot colour during the cooking process, which was a tad disappointing. A quick meal though, that only took abo

Pork & Apple Pinwheels

I was introduced to the concept of the pinwheel by my local butcher. Having bought quite a few, I thought I'd have a go at making one myself. Very simple with only 4 ingredients! Depending on how thick you cut them you can make about a dozen. You could vary the ingredients by adding black pudding or red onion .... it can be flexible to your tastes. Why not give it a go. The Recipe Ingredients 500g minced pork 1 dessert apple (I used Golden Delicious) finely diced 3 fresh sag

Choc Chip Cookies

It doesn't get much better than a homemade choc cookie, they taste so much better when you have made them yourself and, of course, are far better for your bank balance! Easy to whip up and will last a good few days in an air tight container .... haven't tried freezing them (they never last long enough) You choose the favour of chocolate chips or mix as I did. The Recipe Ingredients 150g butter, softened 80g demerara sugar 80g golden caster sugar 2tsp vanilla extract 1 large e

Goats Cheese & Pesto Parcels

These parcels are so easy to make, I don't know why it's been so long since I last made them. Great midweek meal because you're eating them after 30 mins (inc prep). I have only tried green pesto but I'm wondering if red pesto would also work, don't see why not. Ideal if you are vegetarian too, or if like me, you like a few meat free meals during the week. Why not give them a try. You could even make tiny ones as canapes if you are having friends round. 5 ingredients, you can

Chicken Chilli

It's always nice to have options for an alternative to a classic dish. Chilli Con Carne is traditionally made with minced beef and kidney beans, whereas my version uses diced chicken and cannellini beans. It's an easy recipe and takes about 30 mins from start to finish, so it's perfect for a midweek meal. How spicy you make it is down to you, alter the chilli content accordingly. The Recipe Ingredients

Cauliflower Cheese

If there was a Top 10 of comfort foods, I would hazard a guess that cauliflower cheese would be in there. It is an ideal accompaniment to lots of main meals and is regularly served with a roast these days! It isn't complicated or have a long list of ingredients, so this gets a big tick from me. The Recipe Ingredients 1 medium cauliflower 40g butter 40g plain flour 100g mature cheddar cheese (grated) 1 tsp mustard (whichever is your preference) 400ml milk (I used semi skimmed

Victoria Sponge Butterfly Cakes

What do you do when you fancy something sweet but have nothing in the cupboard .... you make something! This was me last night, so I set about whisking together a recipe that dates back at least 40 years to a time when I used to help my mum in the kitchen (and get to lick the bowl!!) Many a fight started about who's turn it was ... I'm sure you can relate. Within 10 mins the mixture was weighed, whisked and plonked into cake cases and ready for the oven. It would have taken

Chicken, Bacon & Mushroom Pappardelle

Pasta is a midweek staple for me. What I love about it is that you can look at what you have in the fridge and cupboards and pretty much make it into a meal. This is exactly what I did with this recipe. You don't have to use Pappardelle, any flat pasta like linguine or tagliatelle will work well. The cooking time is the time it takes to cook the pasta, which is usually around 10 mins - result! The Recipe Ingredients

Chorizo & Roasted Pepper Pasta

When you have a group of friends coming round, pasta is a great dish to serve. I wanted to try a different combination of flavours, so came up with adding in the roasted red/yellow peppers which would give a gentle sweetness. I try to steer clear of anything too spicy, as not everyone has the same palette as me! (although I did sneak a green chilli in) It's not too time consuming as once everything is chopped it pretty much goes in the pot together, so you aren't tied to the

Chicken Jalfrezi

This is a great recipe for curry lovers, although it's nothing overly complicated and once the paste is made it's pretty much a case of bung it in a pan and simmering for a while .... what could go wrong! The peppers give it a softer, sweeter edge and although it has red chillies in it, it isn't overly spicy. I would definitely recommend, especially as a film night meal or on a Friday night, if that tends to be takeaway night. There's nothing more satisfying than making somet

Peanut Butter & Choc Chunk Cookies

These cookies only take about 15 minutes from start to finish. You can whip them up in no time, as all the ingredients bar one go in to the mixing bowl at the same time. I love baking like this. You can of course add chopped nuts instead of choc chunks, that is up to you. When you look at the ingredient list you will see that they aren't as "unhealthy" as you might have first thought. No regular flour, butter or sugar in this recipe! The Recipe Ingredients 1 cup of ground alm

Creamy Mushroom & Herb Pasta

First time of making this pasta dish. I had some chestnut mushrooms left from the stroganoff so thought I'd use them up with some fresh herbs in a creamy sauce - heavenly! It only takes about 10 mins (as long as it takes for the pasta to cook) to produce this plate of deliciousness and you won't be disappointed. Again, it isn't millions of ingredients, so you're onto a winner and perfect for the vegetarians amongst us :-) The Recipe Ingredients

Beef Stroganoff

I'd eaten Stroganoff many times but never made it myself, so this was a first for me. I'd stocked up with tasty treats from the butcher at the weekend including some diced beef, which was bought with something like this in mind. It was really straightforward to make and very tasty, even if I do say so myself! I made a couple of twists on the "usual" recipe for this, I hope you decide to try it. The Recipe Ingredients

Comforting Rhubarb Oaty Crumble

What could be better, on a cold blustery evening, than crumble and custard?! One of my friends turned up at my door with a big bag of rhubarb, so naturally I decided to make a crumble. It's probably the one recipe most would associate with rhubarb. There's not a huge list of ingredients, which as you know is a winner for me! Give it a try. The Recipe Ingredients Filling 400g rhubarb 1 cap of vanilla extract 75g golden caster sugar 2 tsp cornflour Crumble 135g plain flour 15g

Spicy Aubergine Penne

I love quick and easy cooking but also like to try ingredients that I don't use that often, like aubergines. I mean, what do you do with them? So, this pasta dish is easy but tasty and with the added chilli has a nice kick to it too. How much spice you add is up to your tastebuds! The ingredient list isn't huge, which again, is a bonus .... making it an ideal midweek meal - result! Hopefully this might encourage you to try aubergines too, you might be pleasantly surprised, I

Tomato & Mozzarella Bagels

It's nice to try new things especially at breakfast, as we usually get stuck in a rut with what to have and tend to stick with the same things day after day. These bagels are an ideal alternative for breakfast (especially for a weekend breakfast or if you have guests staying that you want to impress) and even make a nice brunch or lunch too! I thought I'd try this Italian influence, after a trip to Italy inspired me to try different combinations of flavours with everyday item

Pasta with Courgettes, Rosemary & Lemon

I always have pasta in the cupboard, it's a staple for me. I like to try different ways of making an easy meal, usually midweek, with as little fuss as possible and as few ingredients as possible. I've tried this twice now, only the second time I varied it and added a lemon & rosemary baked chicken breast and used wild garlic flavoured pasta to just change it up a bit. That's the beauty of cooking, you can tweak here and there to suit what you fancy or just what you have in

Creamy Sausage & Mustard Pasta

We all have recipes we fall back on time after time, and this one is definitely one of those recipes for me. It never fails me and is always comforting, even feels a tad indulgent somehow?! You can use any sort of short pasta such as penne, fusilli or pasta shells (I can't spell that long formal name they have!) as I have tried all of these myself and they all work well although I use penne the most. This recipe makes a good midweek meal, as it doesn't have a long list of ing
