Thai Red Chicken Curry

If you've followed my story so far with this blog, you'll know I'm a big curry fan. Sometimes I fancy something fragrant and flavoursome rather than spicy and when that's the case, I turn to Thai curry. My version of Red Thai Curry is simple to prepare and only takes about 30 mins, so could easily be done as a midweek meal. Yes, you can make your own curry paste (I have in the past) but on this occasion it's done for me by Sainsburys (other retailers are available!) If you ha

Chicken, Bacon & Mushroom Pappardelle

Pasta is a midweek staple for me. What I love about it is that you can look at what you have in the fridge and cupboards and pretty much make it into a meal. This is exactly what I did with this recipe. You don't have to use Pappardelle, any flat pasta like linguine or tagliatelle will work well. The cooking time is the time it takes to cook the pasta, which is usually around 10 mins - result! The Recipe Ingredients

Comforting Rhubarb Oaty Crumble

What could be better, on a cold blustery evening, than crumble and custard?! One of my friends turned up at my door with a big bag of rhubarb, so naturally I decided to make a crumble. It's probably the one recipe most would associate with rhubarb. There's not a huge list of ingredients, which as you know is a winner for me! Give it a try. The Recipe Ingredients Filling 400g rhubarb 1 cap of vanilla extract 75g golden caster sugar 2 tsp cornflour Crumble 135g plain flour 15g

Homemade Shortbread

I used to do a fair bit of baking but have somehow gotten out of the habit, so I thought I'd do a few biscuit, cookie type recipes and so this is the first of many to come. This shortbread recipe is so easy to make, even if you have never baked in your life before, as it's only 3 ingredients! What could be simpler. Ask your friends over for coffee and watch their faces when you offer them homemade biscuits! The Recipe Ingredients 150g Plain flour 100g butter, cold and cubed (

Homemade Chicken Fried Rice

I'm very fond of Chinese food but so often I get that almost floury aftertaste in my mouth (think it's the MSG) and if you have too, why not make it yourself! This is simple, quick and very tasty! The Recipe Ingredients 1 chicken fillet 2 spring onions finely chopped 1/2 a small tin of sweetcorn (in water) A couple of handfuls of frozen peas (cook first) 1 egg beaten 100g of cooked long grain rice (brown or wild if you prefer. I've even tried it with a pouch of Tilda and that
