This is a very simple variation on a standard sponge cake recipe. You can of course add any dried fruit such as raisins, cherries, orange peel, candied peel, currants etc but I prefer to use sultanas. It's always nice to have options for an alternative to a classic dish. Chilli Con Carne is traditionally made with minced beef and kidney beans, whereas my version uses diced chicken and cannellini beans. It's an easy recipe and takes about 30 mins from start to finish, so it's perfect for a midweek meal. How spicy you make it is down to you, alter the chilli content accordingly. Cauliflower Cheese

If there was a Top 10 of comfort foods, I would hazard a guess that cauliflower cheese would be in there. It is an ideal accompaniment to lots of main meals and is regularly served with a roast these days! It isn't complicated or have a long list of ingredients, so this gets a big tick from me. Pasta is a midweek staple for me. What I love about it is that you can look at what you have in the fridge and cupboards and pretty much make it into a meal. This is exactly what I did with this recipe. You don't have to use Pappardelle, any flat pasta like linguine or tagliatelle will work well. Chorizo & Roasted Pepper Pasta

This is a great recipe for curry lovers, although it's nothing overly complicated and once the paste is made it's pretty much a case of bung it in a pan and simmering for a while .... what could go wrong! First time of making this pasta dish. I had some chestnut mushrooms left from the stroganoff so thought I'd use them up with some fresh herbs in a creamy sauce - heavenly! Beef Stroganoff

I'd eaten Stroganoff many times but never made it myself, so this was a first for me. Spicy Aubergine Penne

I love quick and easy cooking but also like to try ingredients that I don't use that often, like aubergines. I mean, what do you do with them?
